How do you know which color you need to use? My problem is dark undereye circles. . I read that peach is good for that. But I have fair skin with a cool undertone. Would pink be a better choice?

They say pink color correctors work for light cool skin tone so that sounds about as close as you can get to the  peach or light salmon color they suggest to correct undereye circles on your skin color/tone without having a line of demarcation.
